Grapes are hand-picked, stomped, and left overnight before being pressed into 2⁄3 stainless steel and 1⁄3 into old puncheon. Blended before bottling in the following spring, bottled unfined, unfiltered, and with light sulfur addition.

Lemon and lime citrus notes jump out of the glass with floral notes and stone fruit right behind. A generous palate weight with sherbet-like acidity running through the middle, maintaining tension.
