This is not your regular Sancerre. Sébastien picks his grapes very late in the growing season, after bortrytis (noble rot) forms. Wine undergoes malolactic fermentation and is aged on the lees. Wines are fermented in large, old barrels with wild yeast and aged on their lees, while still maintaining crisp, intense acidity. No fining, filtering or SO2 added.
Sebastien's wine are complex, bursting with life. Skin contact sauvignon blanc with notes of ripe apricots, meyer lemon, and honey, just to name a few. Stunning texture and color. Seriously delicious and worth a try if you haven't fallen in love with them already!
