This is not your regular Sancerre. Sébastien picks his grapes very late in the growing season, after bortrytis (noble rot) forms. Wine undergoes malolactic fermentation and is aged on the lees. Wines are fermented in large, old barrels with wild yeast and aged on their lees, while still maintaining crisp, intense acidity. No fining, filtering or SO2 added.
Sebastien's wine are complex, bursting with life. Notes of honey, mineral & stone with yeast, ginger spice & orange peel - apricot lushness fills the palate - medium bodied & fantastic.
