The Tannat, Malbec and Cabernet Franc were picked when the acid was bright and the sugars moderate, and whole clusters pressed directly. The juice was allowed to brown by oxygen and then racked into half stainless steel and half neutral barrels for fermentation, cold settled, filtered and then bottled in January. It's a pale salmon color and full of bright citrus, floral and red fruit.
