The bottle: Under one hectare of 70-100 year old vines on thin tuffeau limestone, worked entirely by horse. Whole-bunch pressed, wild yeast, fermented in fiberglass then aged 12-18 months in seasoned oak. The flagship cuvee of the estate — named for the ancient tuffeau walls visible from the plot.

The producer: Twin brothers Guillaume and Baptiste Frey fell into winemaking during the pandemic under the guidance of Vincent Careme. They farm 12 hectares in Vernou-sur-Brenne organically and biodynamically, surrounded by some of Vouvray's best natural wine producers. One of the most exciting new domaines in the Loire.
