Rustic dark pink bubbler from a Cava producer. The wine is primarily Carignan with 10% of the addition of the white grape Xarel-lo. Earthy and autumn leaves with good acidity and dark plummy fruit. Done in the traditional method the same as Champagne and Cava, without dosage so left completely dry. Minerality here is expressed through some structure, and flavors of fresh soil.
