The bottle: Organically farmed schist slopes, native yeast, minimal intervention. Low alcohol by design — bright and gulpable, not watery. Sub Divo means "under the open sky" in Latin.
The producer: Clement Poirel took over the estate of Loire legend Jean-Francois Chene in 2020 — same vineyards, same cellar in southern Anjou. He has made it entirely his own: biodynamic principles in the vineyard, as little as possible in the cellar, and reds that are low in alcohol and high in everything else.
