Based on an old recipe by Guiseppe Cappelletti, Pasubio is named after a mountain in the Dolomites of northeastern Italy. As an aromatic wine at 17% ABV, this is closer to Vermouth than it is to more alcoholic liqueur style Amari. It is a lighter and more refreshing after-dinner digestif. A nose of forest, cola and sarsaparilla, Pasubio continues on the palate with berries, herbs, and spice. A well-tempered bitterness on a finish of pine, earth, and mint notes.
