They built a building made with straw to house their winery. Their vineyard consists of four different soils, which are represented in this Riesling: sandstone, granite, schist, and gravel, which allows the roots to go very deep resulting in very low yields (50HL/ha). Native yeast 8-month fermentation, aging in stainless steel with the lees very, with very little added (less than 1g per hectoliter) of so2.
